Whole, meaty rabbit. All white, delicate meat. Very lean with a mild taste.
Cook with a low/slow, moist method. For a quick meal, we put the whole rabbit in an Instant Pot or crockpot, and then pull the meat off the bone when done for tacos, enchilada filling, sandwiches, and many others. For a gourmet delight, break the rabbit down into parts and braise on the stove or covered in the oven. We LOVE introducing people to eating rabbit - reach out with any questions!
